SANUSVERSUS EXCLUSIVE – The Next Evolution

SANUSVERSUS EXCLUSIVE – Hochlandrind, Austern und Kaviar

From an insider's vision to the world of extraordinary delicacies

The Journey Here

More than 35 years of international top management. 15 countries. CEO, CFO, COO.

My name is Roman Wenzl. As an economist – graduated in Vienna and San Francisco – and manager in international leadership positions, I have worked in the food industry for over three decades – in France, the USA, the Gulf States, and many other countries.

I knew the industry from the inside. I knew what compromises were made on quality. And it was precisely this knowledge that eventually woke me up.

Sanus means healthy. Versus means to oppose. We actively oppose inferior food – for the benefit of your health.

The Next Evolution

What began as a personal conviction – away from industrially processed products, towards real, organic-certified food directly from the producer – has led us on a journey that extends far beyond Austria.

Because the world has more to offer than the ordinary.

There are producers who have perfected their craft for generations. Breeders who invest time where others save. Places where quality is not a marketing statement, but a lived conviction – in the salt evaporation ponds of the French Atlantic coast, in the freshwater ponds of Northern Italy, on the pastures of Austria.

SANUSVERSUS EXCLUSIVE is the consistent further development of this vision: The best that the world has to offer in first-class food – made accessible to a select clientele who appreciate top-class quality.

What EXCLUSIVE Means

🦦 Oysters – Three Generations of Passion

David Hervé Oysters – SANUSVERSUS EXCLUSIVE

David Hervé – Oyster farming in the Claires, Atlantic coast

Since 1939, the Hervé family has been cultivating oysters on the French Atlantic coast. David Hervé, now in the third generation, has combined his grandfather's traditional method with modern know-how. His oysters mature in the legendary "Claires" – former salt evaporation ponds, where fresh and salt water meet and give each oyster its unmistakable, mild character.

"As with good wine, our soil composition is the key to success and uniqueness." – David Hervé

🫙 Caviar – Malossol. Craftsmanship. Centuries.

Caviar – SANUSVERSUS EXCLUSIVE

In the heart of Italy, amidst one of the country's most water-rich regions, the world's most valuable sturgeon species are raised in over 150 hectares of freshwater ponds. For over 40 years, experienced caviar masters have been processing using the traditional Russian "Malossol" method – little salt, maximum character. Certified by Friends of the Sea, BRC, and IFS High Level.
