Why Unpasteurized Organic Hay Milk — and What Pasteurization Really Does to Cheese

Most supermarket cheeses start with pasteurized milk. This is safe, standardized — and the first step towards flavor neutrality. Real Alpine cheese starts differently: with raw organic hay milk from cows that eat hay and grass all year round — never silage, never concentrated feed.

  • Raw milk: living microflora intact — Pasteurization at 72–75°C not only kills pathogens — it also destroys the milk's natural microflora: lactic acid bacteria, enzymes, heat-sensitive vitamins.   • Hay milk: Austria's cleanest milk profile — Hay milk cows eat only hay, grass, and herbs — no silage, no fermented feed, no concentrated feed. The result: milk with a higher omega-3 content, more fat-soluble vitamins (A, D, K2), and a natural aroma that reflects the Alpine meadows

  • Natural humidity: 90–95% — Too dry storage causes the cheese to dry out and crack. Too humid storage promotes incorrect mold. The rock cellar naturally maintains the ideal humidity — the rind develops evenly and protects the cheese
  • Enzymatic ripening process: complexity through time — During ripening, enzymes break down proteins into amino acids and fats into fatty acids. This process creates the aromas that characterize good Alpine cheese: nutty, spicy, complex. Industrial cheese is produced in weeks — real Alpine cheese ripens for months to years
  • Natural rind flora — In the rock cellar, natural microorganisms settle on the cheese rind — Brevibacterium linens, Penicillium species — actively supporting the ripening process and giving the cheese its characteristic flavor. Industrial cellars are sterilized — this natural diversity is lost

Why ripening conditions directly determine nutrient density

Long ripening under optimal conditions is not just a matter of taste — it measurably changes the nutritional profile of the cheese.

  • Increased bioavailability of calcium and phosphorus — during ripening, calcium and phosphorus are converted into more soluble forms through enzymatic processes — the body can absorb them better than from fresh cheese
  • Concentrated nutrients due to moisture loss — ripened Alpine cheese loses moisture — what remains is concentrated: more protein, more fat, more minerals per 100g than fresh cheese. 30g of Alpine cheese provides over 200mg of calcium — a quarter of the daily requirement
  • Vitamin K2 is preserved by gentle ripening — industrial rapid ripening at higher temperatures degrades heat-sensitive vitamins. Gentle cold ripening in the rock cellar preserves the K2 profile of the hay milk
