- Enzymatic ripening process: complexity through time — During ripening, enzymes break down proteins into amino acids and fats into fatty acids. This process creates the aromas that characterize good Alpine cheese: nutty, spicy, complex. Industrial cheese is produced in weeks — real Alpine cheese ripens for months to years
- Natural rind flora — In the rock cellar, natural microorganisms settle on the cheese rind — Brevibacterium linens, Penicillium species — actively supporting the ripening process and giving the cheese its characteristic flavor. Industrial cellars are sterilized — this natural diversity is lost
Why ripening conditions directly determine nutrient density
Long ripening under optimal conditions is not just a matter of taste — it measurably changes the nutritional profile of the cheese.
- Increased bioavailability of calcium and phosphorus — during ripening, calcium and phosphorus are converted into more soluble forms through enzymatic processes — the body can absorb them better than from fresh cheese
